OK we all know Toast is just so tasty, but we all feel a little guilt when we grab a piece and lather it with butter 😋, so what if we swapped butter for a generous topping of healthy fats in avocado and feta and decorated with immune supporting pomegranate? Well now… guilt be gone, you just made yourself the best toast topper ever seen!
Now before the carb police jump on this post, let me just say “I EAT BREAD”. There, I said it. I eat Carbs and love a good piece of Toast! That doesn’t mean I eat it everyday. I don’t sign up for the toast for breakfast, sandwich for lunch and a side of bread with my dinner. Everything is good in moderation. So for me, I enjoy toast occasionally and even more when topped with healthy fats like avocado and feta.
Pomegranate is also a winner. Not only does it taste great, but Ayurvedic traditions use the entire plant for it’s antibacterial and antiviral properties. Please don’t take this as medical advice, but if it helps, we’ll try!

- 2 slices wholemeal bread
- 1 avocado
- ¼ cup (50g) feta cheese, crumbled
- ¼ pomegranate, seeds
- mint leaves, to garnish
What you need to do
1 – Toast the bread to your liking. Remove the avocado flesh and mash it up with a fork, season with salt & pepper.
2 – Divide the avocado between the 2 slices of toasted bread. Crumble the feta cheese on top and sprinkle with pomegranate seeds. Garnish with mint leaves and serve.
