A pancake is just the dream isn’t it! All pancakey and gorgeous and now these little protein packed orange ones are going to change your life. OK, well maybe I exaggerate and they won’t change your life, but how about your breakfast or post workout chow down?
If you’re dairy free then swap out the yogurt for coconut yogurt and it’ll taste just as dreamy. These take no time at all to whip up, so get going. They are great post workout, or for breakfast, or a snack… or just any time of the day. I could eat these over and over 😆

Ingredients
- 2 eggs
- 8tbsp of natural yogurt
- 2 tsp coconut sugar
- 2tsp orange peel
- 2tsp vanilla extract
- 8tbsp spelt flour
- 1 tsp baking powder
- 1 tsp coconut oil melted
- orange slice to serve (for that mediterranean feel!)
What you need to do
1 – Mix the egg, yogurt, sugar and orange peel. Fold in the flour and baking powder and mix well until smooth. Lastly, add in the melted coconut oil and mix again
2 – Fry the pancakes on a dry non-stick pan over low-medium heat until golden brown.
3 – Serve with slices of orange and fresh berries.
