This recipe is part of our Vegan range and I can’t think of anything better to do with over-ripe bananas and some Almonds that create muffins! This recipe takes about 10 mins to prepare, 20 mins to bake and 5 mins to indulge guilt free! Yes please!

Banana and almond muffins

I don’t know about you, but I ALWAYS end up with left over bananas in the bowl going just a little too ripe for me to eat. This great little recipe is going to save you throwing them away and give your tastebuds a little treat at the same time. Coming in at 210kcal per serving it’s a great little snack to have mid morning or afternoon

Banana and almond muffins


  • 2 ripe bananas mashed
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1/2 cup spelt flour
  • 1 tsp baking powder
  • 1/4 cup walknuts

👉Heat the oven to 355°F (180°C) and line a muffin tray with paper muffin cups.  
👉Mash the bananas with a fork and combine with the maple syrup and almond butter. Fold in the flour, baking powder, and baking soda and mix well.

👉Divide the batter between the 6 muffin cups. Top each one with the walnuts.

👉Bake for about 18-20 minutes in the middle of the oven, or until a toothpick comes out clean.

👉Remove the muffins from the oven and cool completely before serving.
